Region: North Canterbury < New Zealand

Grape: Sauvignon Blanc

Vineyard/Cellar Stats: Certified organic farming (BioGro); glacial gravel soils; whole clusters fermented on skins in mostly then matured mostly in Spanish amphora (tinaja), except for a few neutral barrels which were left un-topped to develop a flor for a month then blended and bottled after ML; bottled unfined/unfiltered, with no added So2; zero-zero; 11.5% ABV

Winemaker: Theo Coles

  • Whole cluster, skin-fermented Savvy B. done in amphora
  • Solera-style with a flor to amplify the SB's saltiness
  • Exotic and floral - Thai Basil and lush white flowers
  • Grapefruit-juicy and tropical-fruity in the mouth
  • A tingly, saline acidity lingers
  • Very White Lotus-y (season 3)

Theo doesn't own vineyards, but sources fruit from tiny vineyards throughout the Canterbury region of New Zealand and makes wines with basically no intervention, just loads of soul.
