Vineyard/Cellar Stats: Certified organic farming (BioGro); glacial
gravel soils; whole clusters fermented on skins in mostly then maturedvmostly in Spanish amphora (tinaja), except for a few neutral barrels which were left untopped to develop a flor, for a month then blended and bottled after malolactic, unfined/unfiltered, with no added So2; zero-zero; 11.5% ABV

Theo Coles is the Hermit Ram, and he makes super raw, authentic
expressions of New Zealand's unique terroir -- he calls them
"pre-technology wines". He doesn't own vineyards, but sources fruit from tiny vineyards throughout the Canterbury region of New Zealand and makes wines with basically no intervention, just loads of soul.
Like this 100% whole cluster, skin-fermented Sauvignon Blanc, matured in amphora except for a few barrels which were left untopped to develop a flor and amplify saltiness. Because Theo has a whole big thing about finding saltiness in wines and getting that character involved, he calls it an ode to the New Zealand coastline. And wow, she's a salty one, though I might call her orange rather than white given the month of skin contact. It smells exotic, like green herbs and fragrant flowers, with some lemon curd and tropical fruit in that whiff too. Juicy and tropical-fruity in the mouth, with tingly, saline acidity very prominent, it is layered, intriguing and insanely delicious. Fun to drink solo, but also a great food partner. Try with burritos. And share with your orange-wine loving friends this holiday season.
