Fifth generation vigneron Vincent Caille, who took over his family’s estate in 1986, has all the right creds for the Loire’s new era of natural winemaking: organic leaning towards biodynamic farming and minimal work in the cellar (even an amphora!) – and an extremely idealistic philosophy. This unique sparkler is 100% Melon de Bourgogne (the grape of Muscadet) made according to méthode ancestrale – the old-school, traditional way of making bubbly where it is bottled before all the residual sugar is fermented into alcohol, without dosage. Refreshing and delicious with delicate bubbles, faint salinity, minerality and bright green apple. Fantastic with oysters or as an aperitif, or brunch even. At only 11% alcohol and zero-added SO2, this is all-day drinkable.
