Dominique is the 4th generation winemaker at his family’s 13-hectare estate, where he’s been farming organically since taking over in 1990. He produces some top notch single vineyard Cabernet Francs, but taps his younger vines for this super tasty red sparkler made in the pétillant natural style. It’s as fun and gulpable as it looks, but offers a little extra something we’ve yet to find in a Cab Franc pet’nat – the true flavors of Cab Franc itself! Delicately fizzy and full of strawberries and herbs de provence. with some musky notes in the background and those Cab Franc characteristics we love – black pepper, tobacco leaf and currant. Delicious on its own, this wine also makes an excellent pairing for salmon.
