Vineyard/Cellar Stats: Organic farming; limestone/granitic soils. Ancestral method: after a gentle press, fermentation takes place in stainless steel with wild yeasts. Secondary fermentation takes place in bottle. Unfined, unfiltered, just a touch of SO2. 9.5% ABV

In Kallstadt, in Germany’s Pfalz, a warm (for Germany) region whose wine reputation has largely leaned broad & rich, there is a old organic estate with new blood giving what Stephen from our importer friends Vom Boden calls the “spiritual middle finger” to these wines – they are producing complex, edgy wines harnessing the tension in those rocky soils. Weingut Müller-Ruprecht, Sabine's family estate, has grown grapes here on the most highly prized sites in the Pfalz for nearly 400 years. But now Sabine and her husband Philippe, who studied under Rheinheissen legends Peter Klaus Keller and Julia Keller, have taken over, and are taking the estate in a new direction - fresh, modern, natural, experimental, fun.
We're loving their low ABV red pet'nat, which the Vom Boden guys call "vampire soda." Inky in color, but so light and fresh on the palate, with a frothy bubble and an intense blast of acidity and minerality. Ideal burger bottle.
