Vineyard/Cellar Stats: Organic farming (uncertified), dry-farmed; clay topsoil over limestone; destemmed, macerated on the skins for 5 days, then pressed into a stainless steel tank to undergo spontaneous fermentation. Before fermentation was finished, the wine was bottled and left for 5 months on the lees. Roughly disgorged; bottled under crown cap with no added sulfur; zero-zero; 11% ABV; 300 cases

Croatian pet-nat that drinks like a sparkling Greyhound!
The grapes for this fun bottle come from organic, dry-farmed vineyards near the beautiful and historic town of Šibenik on Croatia's Dalmation Coast that see some of the warmer temperatures in Northern and Central Dalmatia, with cool nights and constant breezes. Pomalo is a new collaboration project with Boris from the Bura-Mrgudic family in Dingac (you know the Bura Fresh wine), and Nick from Heaps Good Wine Co., another low-intervention Croatian producer. "Pomalo”, meaning "to take it easy, to relax, no stress, slow down, no worries...", is rooted in the coastal and island lifestyle and the general state of mind of the Dalmatians. This is a new wine, made for the first time in 2020, made in the ancestral method from Debit, an indigenous Dalmatian white variety that thrives between the ocean and mountains.
And we're loving this hazy, pale yellow bottle of fizz! Frothy, fun and bone dry, it's like vacation in a bottle, with zesty tangerine, tart grapefruit and salt spray. Super clean and delicious, and so easy to drink (low ABV! no added sulfites!) that you could day drink an entire bottle, then nap in the sun and wake up in time for dinner, feeling amazing, as if you were actually on vacation on the Croatian coast. Because somehow vacation wine doesn't take a toll on the body and Pomalo is THAT wine, even at home! It's magic.
