Vineyard/Cellar Stats: Organic farming, clay/sand/limestone soils; fermentation at 15-18°C followed by three months of aging on fine lees; traditional Charmat method in pressure tank; bottled unfined/unfiltered with 30ppm added SO2; 11% ABV
