2024 Field Recordings 'Dry Hop Monte'
Region: San Luis Obispo Coast < CA
Grape: Chardonnay, Citra hops
Vineyard/cellar stats: Organic farming; grapes harvested very early in order to retain high acidity; wine is pressed and racked directly onto hops in a large stainless steel tank; a small portion of the fermenting juice is retained in a temperature-controlled tank, then added back to the wine before bottling. No non-grape sugar was used to finish the fermentation in the bottle. Undisgorged, no added SO2; zero-zero; 10.7% ABV
- The origin story, from the winery: "The perfect Pét Nat is kismet. The wine must be captured in bottle at just the right level of natural sugar, making it perfectly carbonated upon release. Fate lent us a hand with a few select bins from Carroll Ranch, home to some of the oldest vines in Edna Valley. Planted with cuttings from the old Rancho Tepusquet in Santa Maria and tended by the notorious barn boys of Edna for decades, these vines are truly something special in making sparkling wine."
