2023 All Hours Cabernet Sauvignon

Vineyard/cellar stats: CCOF-certified organic farming. It’s plated to clone 6 Cabernet which is known for low yields and very high skin to juice ratio, producing structured wines that can go the distance.  the vineyard is organically and dry farmed; the fruit is destemmed and receives daily punchdowns for three weeks on the skins. Aged in 600L Stockinger Demi Muids for 18 months before racking; bottled unfined/unfiltered w/ 10 ppm SO2 added; 13.4% ABV; 125 cases
