Vineyard/Cellar Stats: Certified organic farming (since the 80’s!); clay and flint soils; Gamay and Grolleau are direct pressed, then whole cluster Braucol is blended in; macerated for three weeks without punch-downs or pump-overs; aged for seven months in fiberglass tanks; racked twice during fermentation; bottled unfined and unfiltered with minimal sulfur addition (12 ppm total); 13%; 350 cases
