Vineyard/Cellar Stats: Certified organic, applying biodynamic principles;  chalky black soils high in limestone; 20 hours maceration on the skins, fermented and rested in stainless tanks on the yeast until bottling. Natural wine, only minimal SO2 added, lightly filtered before with Bentonite before bottling; 11% ABV
