Vineyard/Cellar Stats: Certified organic farming; biodynamic practices; limestone soils; made in the ancestral method for sparkling wine: grapes are hand-picked and immediately softly pressed with a short skin maceration then fermented in steel tanks and refined in tank for at least 6 months. Before bottling, the must from dried Corvinone grapes is added and fermentation continues in bottle; bottled under crown cap without disgorging and with zero added SO2; zero-zero; 12% ABV
