Grapes: Grillo
Vineyard/Cellar Stats: Certified organic farming; limestone sand soil
just steps from the sea; grapes picked the second to third week of
August, immediately brought to the winery (literally a few yards away)
and gently pressed. The grapes’ skins macerate with the juice for 4
hours. The Grillo is fermented in stainless steel tanks, where it ages
on the lees for 2-3 months more before bottling,
unfined/unfiltered/vegan, with minimal So2; 12% ABV

Organic Grillo, grown on a single hectare in a nature reserve on the
sea in Western Sicily, and made by two young sisters, that is salty,
citrusy Sicilian sunshine in a glass!
On the west side of Sicily, in the commune of Mazara del Vallo (a
fishing village, famous for its shrimp), you find Annamaria and Clara
Sala – 2 sisters who run the Tenuta di Gorghi Tondi, adjacent to
Preola Lake and Gorghi Tondi Unesco World Heritage site - an area of
Mediterranean karst lakes forming high mineral content bodies of
water. Also super cool -- a bird sanctuary surrounds the winery of
115 hectares. The Sala family have been farming their vineyards here
for four generations, working with native grapes only, and now young
Annamaria and Clara are at the helm. The Grillo (apparently a
favorite of Julius Caesar) hail from a 1-hectare parcel called
“Contrada San Nicola” which lies on a slight slope of sandy limestone
beside the sea. This vineyard is exposed to Mediterranean Sea breezes
and to the salty air spreading all over the area - one of the main
reasons that this Grillo showcases a distinctive minerality, perfectly
combined with citrus notes. Bright and extremely drinkable, this
Grillo tastes like grilled nectarine seasoned liberally by a salty sea
breeze. We love the rich mineral salinity, round stone fruit and
zesty citrus Mediterranean brightness – classic but super
interesting, and super food friendly. Pair with all kinds of light
healthy Mediterranean foods, especially seafood or fried things.
