Grape: 50% Sauvignon Blanc, 25% Colombard, 25% Ugni Blanc
Vineyard/Cellar Stats: Certified organic farming (since the 80’s!); clay and flint soils; de-stemmed grapes given a long, slow press then fermented in tank (fermentation took 7 months because it was so cold!); rests in fiberglass for 8 months. Malolactic fermentation after primary fermentation adds a fuller and softer mouthfeel. Bottled unfiltered with no added sulfites bottled unfined/unfiltered; zero-zero; 12.5%; 350 cases
