Vineyard/Cellar Stats: Certified organic + certified biodynamic farming; rocky, mineral-rich soils; pressed whole cluster, settled without cooling. Native fermentation with no added SO2, 60% in concrete vats and 40% used foudres (228, 500, and 1500L), goes through ML; bottled unfined/unfiltered with minimal S02; 12.5%

• Small family estate in the Pyrenees, where the relentless winds of the south — Mistral, Autan and Tramontane — and lack of rain stress the vines and extract greatness from the grapes

• Taut, minerally and salty, with creamy pear, flowers and wet stones
