The Thymiopoulos family has owned its Naoussa vineyards for several generations, but only started making their own wine in the early 2000s. Fourth generation Apostolos Thymiopoulos graduated from the University of Athens oenology program and took over in 2004, when he replanted vines of old, native varieties and led the charge to become the region's FIRST certified biodynamic winery. A very big deal -- and effort -- in these parts.
This is their 100% Assyrtiko, the most important Greek white grape (which you know best from the special whites of Santorini). This one, from younger vines (20 years old) planted at 500m, is made for daily summer drinking. Matured on its lees for two months to balance the variety's steely acidity with complex creamy notes, there’s more palate weight and texture than Assyrtiko from Santorini, it’s still saline and citrus-inflected, with lemon verbena, zesty acid and intense minerality from those volcanic soils. Put your relationship with Sauv Blanc on hold for the summer, and transport yourself to a sunny Greek island with this pretty Assyrtiko!
