Vineyard/Cellar Stats: Certified organic + biodynamic farming, white
clay/limestone/flint soils at 300m, 50-100 year-old vines; fruit from
4 parcels is picked, destemmed pressed, and given 24 hours of skin
contact before spontaneous fermentation. Aged on fine lees primarily
in amphora as well as French oak, American oak, Acacia and Chestnut
wood barrels; wine then ages for 8 months in its lees before being
bottled unfined/unfiltered with zero added SO2; zero-zero; 300 cases;
13% ABV

Four viticulture and enology students got together in 2006 to startMas Candi to make wines from their families’ vineyards, all farmed
biodynamically and based on indigenous Catalan varieties. Xarel-lo is
the lead grape in Cava, Spain's sparkling wine, and rarely is bottled
on its own. This is their high-end cuveé, with the Xarel-lo coming
from 4 vineyard sites that they’ve picked out as being of particularly
high quality, then getting 4 different aging variations. It's a wine
that feels special and important, and classic, while being as natural
as they come. It smells like pineapple and ripe stone fruit, flavors
that carry over to the rich, creamy palate. But it is no way big or
heavy, thanks to the bright, limey acidity and long, salty finish that
clean everything up. A fantastic food wine, or partner for cheese
plates.
