This seriously delicious Pet’Nat, a fixture in the natural wine bars of Barcelona, was a Rock Juice favorite last fall – so we’re excited to feature the new vintage! Tinc Set (which is Catalan for “I’m thirsty”) is organic and biodynamically farmed Xarel-lo and Parellada (two of the great local grapes of Penedes) turned into bubbly via the ancestral method, which means its bottled just before primary fermentation is finished. Calcareous and clay soils speak loudly through tiny, firm bubbles, vibrant golden fruit, fresh peach, green apple skins, bitter almond, salty yeasts, and crunchy mineral length. Exuberant and fresh in flavor, yet smooth and round in texture, with no additions whatsoever. Tinc Set pairs nicely with a chill in the air and something salty in your mouth!
