On a site dating to the 1st century AD, Karina and Guillaume grow olives, veg/fruit, grapes, livestock, and cultivate grains for animal feed, homemade beer and bread – a self-sustaining ecosystem, without industrial chemicals or intervention. Love these guys! As a tribute to the tradition of wasting nothing on a pig, Cochon is a simple, honest red made with fruit from the press of their ‘Pomponette’ Rosé (a Rock Juice favorite). Medium-bodied and fresh, with plummy, berry flavors and maybe a touch of black cherry soda, some bitter herb, sweet fruit, and bright acids. Gulp-ably delicious, with those bold flavors of Provence, and zero added SO2? More please!
