Sauro Maule is a young farmer raising cattle his father’s horse farm, “Il Cavallino”. But all along he was under the wings of his cousin, famed natural producer Angiolino Maule, who was quietly teaching him to make wine. In 2010, he decided to trade cattle for wine and replanted the family vineyards on the volcanic, limestone hills of Berici. From the, decided that he would work naturally, so his vineyards have never seen pesticides or chemicals – natural vegetation reigns, and manure covers the vineyard soil in the winter. Sauro makes arguably the best whites in the region, taking inspiration from the Loire whites he loves. This wine is creamy and perfumed on the nose, but electric on the palate, with bright, poppy lemon and floral notes, and ripping acidity.
