Gorrondona, an ancient estate in the Basque province of Bizkaia resurrected by three friends in the 60’s, produces one of the most delicious and natural Txakoli in the region. From 30-year-old organic vines that face the Cantabrian ocean, the fruit is fermented with indigenous yeast in stainless steel tanks, producing a slightly effervescent, juicy wine with a ton of salinity, firm apricot, nectarine on the palate and a lean, clean finish. In 2010, these guys even implemented a policy to use only cork from certified organic farms instead of the chemically treated ones. The ultimate delicious water!
