Seth Cripe (of Anderson Valley’s Lola Wines) brought the winemaking he studied in France back to Napa Valley with a clear mission: natural winemaking, minimal intrusion, and balanced wines. Seth is one of Napa’s youngest vintners, and he is making waves with his Sapare Aude (meaning “Dare to Know” in Latin) project, where, he says, “we take a minimalist approach to wine making, from soil biodynamics to low impact packaging, hand crafting cremant style rosé in small batches in Napa Valley.” This bright, crispy and squeaky clean bubbly rosé snaps, crackles, and pops. Bursts of crisp, ripened strawberries and sugared raspberries join in harmony with the toasty, earthy complexity. The ultra fine bubbles elevate the acidity, and make for a smooth, silky texture.
