Vineyard/Cellar Stats: Certified organic farming; 6 months aging in used barrels, then 4 months natural fermentation in bottle; no added SO2; 5.5% ABV

In Brittany, there is a huge hard apple cider tradition, and locals consume the low ABV adult beverage as much as wine, pairing it with all of the stinky cheeses of the region, as well as the seafood and shellfish from it's shores.  The Séhédic family has been producing cidres from traditional Breton apple varieties since 1950, with the second generation Marie Laure Sehedic and her husband Christian Danielou now running the certified-organic family orchards and cider making.  Their Brut Cidre is made from 30 heirloom apple varieties in a refreshing sparkling style.  It smells gorgeous, like an apple orchard on a crisp fall day, with ginger and bright apple on the palate balanced by hints of bitter tannin and slight barnyard funk that add depth and complexity.  We especially love the acid-driven tartness on the finish, making this the perfect pairing for just about every cheese there is.  It would also be awesome with squash soup, brothy mussels or poultry with a creamy sauce.  Super fun bottle to play with in the holiday wine mix!
