Sébastien Chatillon, aka Ad Vinum, is a university dropout who bounced around odd jobs like stable hand, candy salesman, and amateur rock star before discovering his true calling: natural wine. He moved to the Loire Valley and worked with natty superstar René Mosse in Anjou for four years, which was the big "aha" moment: "It was fresh, different, and in the morning I had no headache. A dream for a guy like me." So, as one does, Sébastien became a somm at a famous bougie Paris restaurant for 7 years before moving to Vallabrix in the Gard to start making his own wine. And now he also has his own Paris playground, Le Cave, a tiny natural wine shop in a city that goes crazy for the natty juice.

“Bim” is slang for “word”/“dope”/“bet”, and this wine was created to commemorate the natural wine festival called Bim that he also started. Bright and juicy, it smells like candied blackberries and tastes like crunchy black fruit, licorice and purple rocks.  Complex and soulful and constantly evolving, this is a slightly addictive drink, especially with a slight chill.  Tiny production, worth the hype.
