NV Col di Luna 'Flora' Rosato Col Fondo

Vineyard/Cellar Stats: Organic farming (uncertified); gravel and
limestone soils; 12 hours maceration on the skins. Fermentation with
native yeasts starts in stainless steel tanks and finishes in bottle;
unfined/unfiltered with <30ppm added So2; 11% ABV

FUSO is a collaboration project between natural wine importer
Portofino with organic grower/vignerons in different Italian regions
to produce "Italy’s natural and characterful daily drinkers from
farmers and producers who are our long time friends and colleagues".
Here they partner with Col di Luna, a small producer making sparkling
wines at the foot of the Dolomites in the Veneto region, with a family
tradition and preference for the Brut style.  Flora rosato comes from
the local grape variety called Raboso, a local grape with loads of
spice, brambly fruit, and vibrant acidity. The wine is fermented with
a slight maceration on the skins for 12 hours, and then continues to
ferment in the tank. Once the wine settles, they transfer the juice to
the bottle, where it finishes fermentation and creates the magic fizz.
This is the traditional Col Fondo style (meaning on the lees), so
you’ll notice a bit of ‘fondo’, or sediment, in the bottle.

It glows a beautiful hazy neon pink, and falls somewhere in between a
frizzante and Prosecco with vigorous bubbles, savory tomato water
acidity, tart red fruit, and a savory, herbal note on the grippy
finish.  Bone dry, with acid to cut through all manner of fat, this is
a lovely bubble to serve with meaty/cheesy apps at a holiday
gathering.  And it's party-priced too.  So much to love.
