Ecocert certified organic; Sandy clay soil (Granitic base); grapes are
gently hand-harvested into perforated crates. Méthode Champenoise,
grapes are whole cluster pressed then the base wine is fermented and
aged in bottle (called “prise de mousse”) before it is ready to
disgorge (the dead yeast cells are separated from the wine) after 3
years on the lees, no dosage; minimal added So2; 12.5% ABV

A gorgeous biodynamic sparkler that is literally Champagne from
outside the Champagne zone -- meaning it's priced for real drinking,
not saving for a "special" occasion!

The history of Chateau de Lavernette goes back to 1596 when the
Lavernette family purchased the property and all its vineyards from
the Tournus monks, who understood the great quality of the soil. It
has remained within the family ever since and in 2007 the 13th
generation of winemakers took the reins with Xavier de Boissieu. In
2005, the de Boissieu family converted to organics, and when Xavier
arrived, they started Biodynamic practices. Today the estate is both
Ecocert and Demeter certified.

We're obsessed with this sparkling wine, which rivals the best Blanc
de Noir from Champagne, but since it's made in Beaujolais, it can't
wear the prestigious name tag and must be called Crémant instead.  The
color is the palest ballet slipper pink, the bubbles are feathery and
smooth with a velvet texture, and the bone dry palate dances between
pretty red fruit and savory herbs and wet rocks.  Perfect as an
aperitif, with the cheese course, even for breakfast if you're feeling
especially celebratory.  'Tis the season after all.
