Gilbert Cordeuil farms 9 hectares of vines that his parents planted in the 1950s, the grapes from which they sold to the local wine cooperative until 1971 when they decided to bottle their own Champagne. Gilbert took over in 1973, and expanded the domaine to the current size with 6.50 hectares of Pinot Noir, 0.25 hectare of Chardonnay and 2.25 hectares of Pinot Blanc. The family always worked with very little additions in the vineyard, relying on cover crops instead of chemicals, before converting entirely to organic agriculture and finally certification in 2011. The hallmark of the domaine is extended ageing on the lees – a minimum of 7 years for the Extra-Brut. Why? Because Gilbert Cordeuil likes Champagnes with lots of bottle age – and so do we, but usually we can’t afford them! While not vintage dated, the fruit for this bottling is entirely from the 2005-2006 vintage. The unusually long time on the lees gives it a rich, round texture and decadent notes of praline and brioche. A delicious and happy celebration bubbly, perfect with a soft, triple cream cheese.
