Spicy, juicy fall rose that drinks like a light red and begs for food,
the first project from a young couple who works with/is mentored by
famed natural Cahors producer Fabien Jouves!

The ancestors of current owners of Dauliac, Ghislaine and Thierry
Baltenwech settled in the region of Cahors in 1852 and built their
domaine atop the third terrace in Cahors -  the most prestigious due
to its soils and terroir. For the last 8 generations the domain was
headed and run by women, and Ghislane continues the tradition, running
the 20 h estate with her husband. The family has always worked
organically, gaining organic certification in 2013, and now, working
towards their biodynamic certification. Local natural wine legend
Fabien Jouves from the Mas Del Périé estate helps the couple as they
branch out into newer and nattier territory.

This rosé is everything we want right now  - soft, spicy, with a
clarity of fruit (cranberry, pomegranate) that makes it feel more like
a baby red than a rosé.  This pretty mauve wine deserves a place on
the dinner table -- try with veggie-forward dishes of all kinds, or
even with your T-day spread.  It's super versatile and could easily
take on the diversity of flavors on the holiday table.
