NV Fidora Tenuta Civranetta Brut Prosecco

Grape: Glera

Vineyard/Cellar Stats: USDA certified organic; certified biodynamic;
certified vegan; single vineyard near the Venetian lagoon with bands
of “Caranto”, the ancient Pleistocene stratification, which is
composed of compact clay-loam soils with calcareous nodules; made in
the charmat method with second fermentation in tank for 8 weeks; 11%
ABV

The Fidora family began producing wine in Venice in 1927, but went way
off the beaten path in 1974 when they became pioneers for organic
farming in the region.  Today, with the 4th generation at the helm,
they are also certified biodynamic and proudly wear their
low-intervention flag in a region where industrial Prosecco production
is the norm.  As a result, we're generally not big fans of Prosecco --
but we love this one, which is complex and super dry and almost salty,
with a firm mineral backbone.   The Glera grapes for this wine come
from a single vineyard located near the Lagoon of Venice, where the
unique minerality of soil and proximity to the sea lends a lovely
salinity and minerality one rarely sees in simple Prosecco.

So if you're toasting this season (and we sincerely hope you are,
early and often), trade out the blue label for this bubbly, which is
delicious enough to enjoy on its own, with subtle aromatics, crisp
apple and the aforementioned salty/savory side.  But it also makes a
mean mixer for cocktails galore, adding some sprightly fizz to your
drinks without any additional sweetness.  An amazing value for the
quality, so stock up.  Makes an excellent house bubbly or party wine.
