Winemaker: Patrick Boudon

In the heart of Entre-deux-Mers in Bordeaux, the Boudon family has farmed the 27ha vineyard since 1920.   It was the grandfather of Patrick Boudon, the current owner, who converted to organic farming and became certified in 1963 (a real revolution in the Bordeaux vineyards!)  In 1970 Patrick took over the farm, continuing not only the organic farming but also production, insisting on native yeasts and minimal use of So2 (rare in these parts). The soils here are magnificent, full of that chalky calcareous goodness that makes Champagne or Chablis so special.

Normally Crémants de Bordeaux aren't that exciting, and usually considered not as good as other Crémants of France, but this one is impressive, thanks to the impeccable farming and mineral-laded soils.  Dry and refreshing with honeyed apple and pear notes, fine bubbles and a firm structure, and a tart, minerally finish.  Bonus points for being organic pioneer in a very conventional region.  The perfect all-purpose classic bubble for everything holiday.
