Hervé and his sister Isabelle are true Loire vignerons, the product of several generations of vignerons that work and farm the family vineyards in and around Cellettes, in the Touraine appellation. Hervé began moving away from conventional farming in the late-nineties when, after a few years of working conventionally (and after many conversations with his friend, natural winemaker Thierry Puzelat) he felt the wines weren’t as good as he thought they could be.  After a few years of organic farming, he noticed a huge difference in quality, and never looked back.  

This wine is a special bottling of Hervé’s estate white grapes.  And he thinks it is so drinkable that a standard bottle just wouldn’t hold enough, so he’s using a 1 liter bottle (they’re actually adorable vintage milk bottles that he stumbled across – so hold on to the classic glass for another use!) 'Bovin' is classified as a Vin de France, and Hervé says it is “frais et gouleyant, a boire d’une traite”.  Essentially, he’s saying it is fresh and should be drunk in one go! He’s clearly our kind of guy. And this is our kind of wine- honeyed, waxy, aromatic and easy drinking – for picnics and parks, and Tuesday night dinner with friends.
