Aline Beauné is a young female winemaker we've got our eye on. As the winemaker of a fancy Burgundy producer, Château de la Crée, for 15 years, Aline established herself as a top-tier winemaker in Côte
Chalonnaise. In 2018, when the lease expired on 5 hectares of prime
vineyards in the commune of Saint-Vallerin, she jumped at the chance
to strike out on her own and took over the vines. The previous tenants
had been farming responsibly, but Aline knew she could do better. She immediately transitioned to organic farming, and now also implements biodynamic treatments for vine health.

The 5 hectares that got Aline her independent start are planted with
four varietals, including Aligoté.  While everyone knows Burgundy for
the superstar grapes Chardonnay and Pinot Noir, Aligoté is the
region's unsung hero. It makes for a very classic Burgundy white,
though leaner, less fleshy, higher acid and generally way less (or no)
perceptible oak then Chard. Also less spendy.  Aline's Aligoté is
grown on just 0.7 hectares of 10-15 year old vines, on an east-facing
plot, perfect for soaking up the morning sun and warming the
clay-limestone soil in this cool region. This wine is classic
Burgundy, flinty, with golden apple and lemon, lightly floral notes
and a zesty streak of acidity. This is a serious food wine, but very
versatile in its pairing potential - think salads, veggies, anything
with goat cheese, even a nice roasted chicken.  Aline produces just
500 bottles, and we got the last 36 of them. If you're a Burgundy fan,
we recommend getting your hands on at least one.
