The Anima Negra (black soul) winery on Mallorca, an island off the eastern coast of Spain, is the small project from two brothers-in law, both dairy farmers, on a 17th-century dairy. A blend of a local red grape, Callet, along with a local white grape Premsal and a touch of Muscat, this is a super interesting wine. You get red fruit on the nose and a touch of tannin from the red Callet, yet it’s light, bright and herbal going down. Also a bit gritty and salty, like a beach picnic where you’re gorging on peaches, pears and shellfish and you get a few flecks of sand in your mouth, surprising you with a briny crunch.
